Backstory
A Deba is a type of Japaense style knife. It is traditionally used to clean and fillet whole fish, but it is also commonly used for breaking down and dressing poultry and other meat with small bones [1]. Hocho is a "kitchen knife"; literally in Japanese it means “kitchen worker” [2].
Therefore, the "Debahocho" is simply a "kitchen knife" with the prefix of being a specific style Japanese knife.
